This is a very simple and delicious dish, quick and easy prawns in a tomato sauce with garlic and sweet peppers. The recipe is taken from 1000 Recipes cookbook.
Ingredients:
1 big onion, finely chopped
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
3 garlic cloves, crushed
120 ml dry white wine (or stock)
250 ml passata
450 g cooked peeled tiger prawns
1 tbsp Worcestershire sauce
1-2 tbsp chilli sauce (optional)
Method:
Heat the oil in a large frying pan and fry the onion for 5 minutes, or until softened and beginning to turn golden.
Add the pepper and fry for another 5 minutes, or until softened.
Add the garlic and fry for a few seconds.
Stir in the wine and let it bubble away for 1-2 minutes.
Stir in the passata and bring to the boil, stirring, then reduce the heat and simmer for 5 minutes, or until reduced slightly.
Add the prawns, and stir until piping hot. Don't overcook, or the prawns will become tough.
Stir in the chilli (if added) and Worcestershire sauces, and serve immediately.
