Well, this is not at all a classic Indian chicken tikka recipe, but a nice and quick variation with vegetables, and by using a paste, this is simplicity itself.
The recipe is adapted from Feel Good Food magazine (Autumn 2015).
Ingredients:
1 tbsp groundnut oil
1 red onion, sliced
500 g pack chicken fillets
2-3 tbsp tikka masala powder or 4-6 tbsp tikka masala paste
200 french beans
1 red pepper
200 g can chopped tomatoes
coriander leaves to sprinkle
Method:
Deseed and slice the pepper, trim and halve the french beans. If using tikka powder, dissolve it in 1-2 tbsp water to make a paste.
Heat oil in a large wok or frying pan and gently fry the onion for 5 minutes to soften.
Add the chicken and tikka paste and cook for 10 minutes, turning as needed, until browned.
Add the french beans, red pepper and 100 ml water, cook stirring for few minutes.
Add the tomatoes.
Warm through for 5 minutes, or until the vegetables are cooked up to your taste.
Sprinkle with some coriander leaves.
Serve and enjoy with naan bread or rice.
