Vietnamese Beef and Lemongrass One Pot


It's an easy to make dish, fragrant and spicy sauce with tender chunks of beef, perfect with jasmine rice, Asian greens or noodles.

The recipe is adapted from "Olive" magazine (October, 2015).

Ingredients:


600 g lean beef steak, diced
2 medium onions, sliced
3 stalks lemongrass
2 cloves garlic, crushed
1 big red chilli (or 2 small)
3 kaffir lime leaves
2 star anise
400 ml vegetable stock
1 tbsp fish sauce
2 tbsp lime juice

Method:

Heat oil in a deep frying pan, season the steak pieces and fry them in batches, scooping once browned.


Add the onions, lemongrass, garlic and chopped chilli to the same pan and cook until fragrant.



Add the lime leaves, star anise and the meat, and cover with stock.


Put the lid, reduce the heat and simmer for 1 1/2 hours or until the beef is tender and cooked through, stirring occasionally. Remove the lid for at least 15 minutes to thicken the sauce, if it's too thin.

Add the lime juice and the season with more fish sauce if you like.
