Coriander Rice


This is a very easy and quick recipe of the coriander rice, that can be enjoyed with raita or any sort of curry to go along with it.

The recipe is adapted from Rice cookbook by The Australian Women's Weekly.

Ingredients:


150 g onion, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
1/2 tsp turmeric
2 x 280 g packs ready to eat microwaveable basmati rice
250 ml chicken stock
35 g dried currants
60 g frozen peas
silvered almonds for sprinkle
fresh coriander leaves for garnishing

Method:

Heat oil in a a pan, add onions and spices, cook stirring until the onion is soft.


Stir in stock, add currants and peas, simmer covered for 2 minutes.


Stir in the rice, add fresh coriander by taste. Heat the rice through and remove from the heat.


Sprinkle with some almonds, serve and enjoy!
