This is a hearty Jamaican-style stew, tender beef chunks cooked in a thick and spicy tomato sauce, delicious and easy one-bowl dish.
The recipe is adapted from Cooking for All Occasions by Norma McMillan.
Ingredients:
1 1/2 kg stewing steak, diced
50 g plain flour
75 g butter
1 large onion, sliced
1 red chilli
1 garlic clove, crushed
1 tsp fresh ginger, ground
400 g can chopped tomatoes
1/2 tsp dried thyme
1 cup water
season to taste
Method:
Coat the beef cubes with the seasoned flour.
Melt the butter in a deep pan or wok, add the beef cubes, in batches, and brown on all sides. Remove the cubes with a slotted spoon.
Add the onions, chopped chilli, garlic and ginger to the pan and fry until they are softened.
Return the beef to the pan and add the tomatoes and thyme.
Add the water, bring to the boil, cover and simmer on low heat for 3 hours or until the beef cubes are tender.
Serve hot and enjoy!
