Hörbiger Torte

This cake was named after Paul Hörbiger, an Austrian movie star from the 1940s to the 1960s. It's an almond cake with berries, more of a pudding type, since it's baked without adding the flour and any baking powder or soda.

The recipe is taken from Germanfoods.org: Almond Berry or Cherry Torte.

Ingredients:

150 g caster sugar
150 g softened butter
150 g grounded almonds
4 tbsp breadcrumbs
4 eggs (separated)
100 g semi-sweet chocolate**
pinch of salt
fresh cherries (or other berries) for topping

**I added only half quantity (50 g) and replaced semi-sweet with white chocolate with strawberries.

Method:

Preheat the oven to 180 C (160 C fan).

Chop the chocolate finely (or coarsely, if desired).

Cream together the butter, salt and sugar until pale and fluffy.

Add the yolks, beat until incorporated.

Fold in the breadcrumbs, chocolate and grounded almonds.

Beat the egg whites until the stiff foam and carefully add them to the batter.

Grease and line the bottom of a 20 cm baking tin.

Spoon the batter into the tin and level the surface.

Scatter the berries over the cake and press them into the batter slightly.

Bake in a preheated oven for 30 - 40 minutes, or until the toothpick comes out clean.

Leave to cool completely and remove from the tin.

Enjoy with a cup of tea or coffee.

Bon Appetit!
