Cherry and Marzipan Chocolate Traybake

This is a delicious chocolate cake with cherries - moist sponge with plenty of juicy berries topped with a layer of chocolate and marzipan pudding.

The recipe is adapted from Blechkuchen von A-Z by Dr. Oetker.

Wholemeal Bread Pudding with Nectarines

This is an easy way to turn some excess wholemeal bread (or bagels) into a delicious summer pudding with any type of fruits on top: nectarines, apricots, apples, kiwis, peaches etc. Rye bread can be also used in this recipe.

Fruit Salad Tart

This is a lovely fruit tart that is easy to make, a combination of juicy fruits and delicious shortcrust pastry, enriched with mascarpone and flavoured with vanilla. Perfect as a summertime treat!

The recipe is adapted from Limoncello and Linen Water by Tessa Kiros.

Berry Friands

Friands are small French-style cakes or muffins flavoured with ground almonds, that give them dense and rich texture.

The recipe is adapted from Everyday Easy Cakes and Cupcakes by DK.

Kaiserschmarren

Kaiserschmarren is a kind of shredded pancake, which has its name from the Austrian emperor Kaiser Franz Joseph I of Austria, who was very fond of this delicious and very simple dessert.

This pancake has fantastic fluffy and tender texture, and is semi-sweet, that makes is taste great with any fruit sauce or compote, or just the way it is. Kaiserschmarren can be prepared in different ways. This recipe is taken from the cookbook by Hotel Sacher.

Quick mini-canneles

Caneles is one of my favorite desserts, it a sort of tiny pudding that has a crisp caramelized crust and a creamy custardy interior. Though they originated in France (in Bordeaux to be more precise, and have another name Bordelais), they are quite popular here in Britain too.

Why I called them quick? Because this recipe doesn't require 24 to 48 hours for the fermenting, like the majority of the cannele recipes do. You can bake the same day as you make the batter. That's certainly an advantage for those, who don't want to wait of that long.

The recipe is taken from the book "Coffee-time treats" by Jose Marechal.

Biscotti della Nonna

This is one of the simplest recipes I have ever tried, the Tuscan biscotti, with mild almond taste and perfect crisp, and with a delicate hint of vanilla and orange.

There is nothing to do with Italian "Torta Della Nonna" though. I named my biscotti after one Italian babushka, who was kind enough to share her recipe with me (Nonna means Granny in Italian).
