This is a protein packed Chinese soup, flavoured with ginger and coriander, very quick and simple to make.
The recipe is adapted from Easy Soup by Marks&Spencer.
Ingredients:
225 g beef mince
1 l chicken stock
3 egg whites, lightly beaten
1 tsp salt
1/2 tsp white pepper
1 tbsp fresh ginger, grated or finely chopped
1 tbsp finely chopped spring onion
1 cup fresh coriander leaves, chopped
For the marinade:
1 tsp salt
1 tsp sugar
1 tsp Chinese rice wine
1 tsp light soy sauce
Method:
Combine all the ingredients for the marinade in a bowl with beef, mix well and allow to marinate for 20 minutes.
Bring the stock to the boil in a large saucepan.
Add the beef, stirring, to break up any clumps, and simmer for 10 minutes.
Slowly add the egg whites, stirring rapidly so that they form into fine shreds. Season to taste with salt and pepper.
Place the ginger and coriander into the warmed bowls.
Ladle the soup on top and sprinkle with the onions.
Perfect with some croutons added.
