This is a very simple and delicious one-bowl dish - a combination of rice, chicken and mushroom in oriental style.
The recipe is adapted from The Complete Step-by-Step Cookbook.
Ingredients:
1 x 400 g pack ready to eat long-grain rice
1 onion, finely chopped
2 garlic cloves, crushed
2 fresh red chillies
225 g chicken breast fillets, diced
1 x 225 g can bamboo shoots
250 g fresh shiitake mushrooms
2 tsp shrimp paste
1 tbsp fish sauce
25 fresh basil leaves
season to taste
Method:
In a wok or a deep frying pan heat some oil, add onion and garlic and cook, stirring occasionally, until golden.
Add sliced chillies (deseed them if you prefer less hot) and chicken, and stir-fry for 2 minutes.
Stir in the bamboo shoots, mushrooms, shrimp paste and fish sauce.
Continue to stir for 2 minutes or until the chicken is cooked through, then stir in the rice and basil.
Serve and enjoy!
