This Chinese-inspired chicken dish is quick, easy and very delicious!
The recipe is adapted from Olive (100 of the very best Chicken Recipes).
Ingredients:
8 small chicken thighs (or mix of thighs and drumsticks)
1 tbsp fresh ginger, grated
2 garlic cloves, crushed
1 star anise
4 spring onions, sliced + extra to serve
100 ml Chinese rice wine (Shaohsing) or dry sherry.
2 tbsp soy sauce
1 tbsp palm sugar
150 ml water
steamed rice and green veggies to serve (broccoli, fine beans, spinach, sugar snap peas etc)
sesame oil for drizzling
Method:
Heat 1 tbsp oil in a large frying pan or wok, add the chicken and cook for 5 minutes, turning, until lightly golden.
Add the ginger, garlic, star anise and spring onion.
Cook for a minute, stirring, then add the rice wine or sherry, soy sauce, sugar and water.
Reduce the heat, simmer and cook, covered, for 20 minutes, turning the chicken every now and again.
Uncover, then continue to cook until the sauce has reduced, thickened and is glazing the chicken.
Serve the chicken with steamed rice, the veggies, drizzled with sesame oil and the sauce spooned over. Scatter over the green onions.
