Malibu and Coca-Cola Cake


This is one of the best cakes I have ever tried. It has wonderfully moist and delicate texture, with some chocolaty icing soak deep into the cake from the top, and strong caramel smell and flavour with a hint of rum and coke.

The recipe is taken from Cake of The Week blog: Malibu&Coca-Cola Cake, with some alteration from my side - I slightly reduced the sweetness and replaced Malibu liqueur and Coca Cola with a tinned sparkling drink.

Ingredients for the cake:


(double size cake for 40 cm tin)

400 g plain flour
400 g caster sugar
1 tsp baking powder
1 tsp baking soda
4 eggs
350 ml tinned Malibu and Coca Cola sparkling drink
150 ml yogurt (pineapple and coconut flavoured will work perfect)
250 g butter
4 tbsp cocoa powder
2 tsp vanilla extract

Ingredients for the icing:


200 g caster sugar (or 400 g icing sugar if you prefer)
60 g butter
6 tbsp Malibu and Cola sparkling drink
2 tbsp cocoa powder
1 drop of rum essence

Method:

Preheat the oven to 180 C (fan 160 C). Grease and line 40 cm long baking tin.


Melt the butter in a saucepan over a low heat, add cocoa powder and sparkling drink.



Allow to cool, then beat in the eggs, vanilla extract and yogurt.


Sift the flour into a mixing bowl and stir the sugar, soda and baking powder into it.


Make a well in the middle of the flour mixture, and pour the butter mixture into it.



Gently fold the ingredients together using a wooden spoon, make sure no lumps of flour are left. This is what you will get in the end.


Pour the batter into the tin, then bake in the oven for 40 minutes, or until a skewer comes out clean.



Leave to cool completely, and meanwhile prepare the icing. Melt the butter over a low heat, then stir in the sparkling drink and cocoa powder.


Stir the rum essence, then add caster sugar.


Keep cooking over a low heat until all sugar is dissolved. The icing should be glossy and a bit runny. Remove from the heat and leave to cool.


Pour the icing over a cake, you might need few layers if it is still a bit runny, but it will set after it gets completely cooled. Some icing will soak through, making the cake perfectly moist and chocolaty.



Sprinkle with some finely grated chocolate, if you like, for example, crush some toffee flavoured chocolate drops, like I did.


Enjoy with a cup of tea or coffee.
