Basil and tomatoes are ideal flavourings for prawn, spiced with cumin seeds and garlic. This extremely easy and quick recipe is taken from "Ultimate Low Fat" cookbook.
Ingredients:
2 tbsp corn oil
1 medium onion, finely chopped
2 cloves garlic, crushed
1 tsp cumin seeds
1 tbsp sugar (preferably demerara, but any other will do)
400 g can chopped tomatoes
1 tbsp tomato puree
1 tbsp chopped basil leaves
450 g ready to eat king prawns
salt and pepper by taste
Method:
Heat the oil in a large preheated wok. Add the onion and crushed garlic and stir-fry for 3-5 minutes until softened.
Stir in the cumin seeds and stir-fry for 1 minute.
Add the sugar, chopped tomatoes and tomato puree to the wok.
Bring the mixture to the boil, then reduce the heat and leave the sauce to simmer for 10 minutes.
Add the basil and prawns to the mixture.
Season to taste with salt and pepper. Cook, stirring, for a further 1-2 minutes and remove from the heat.
Transfer to a warm serving dish. Enjoy with basmati rice or spaghetti.
