Chicken & Summer Vegetable Soup


This soup is very delicious and very simple to make, also it's super healthy and low in calories.

The recipe is adapted from Easy Soup by Marks&Spencer.

Ingredients:


2 skinless chicken breast fillets, sliced
2 garlic cloves, crushed
2 courgettes, diced
200 g french beans, cut into smaller pieces
350 g tomatoes, roughly chopped
1 x 410 g can pinto or borlotti beans, drained and rinsed
1,2 litres vegetable stock
fresh basil leaves
season to taste

Method:

Heat 2 tbsp oil in a large saucepan set over a medium heat. Add the chicken and garlic, and cook, stirring, for 3 minutes. Try not to let the chicken or garlic brown.



Stir in the courgettes, beans, tomatoes, pinto beans and stock.


Cover and simmer for 10-12 minutes or until the chicken is cooked through and the vegetables are tender.

Stir in the basil leaves and season to taste.


Serve and enjoy!
