Cauli rice is a low carb alternative to rice, made from fresh cauliflower. It can be used as a replacement to rice, potatoes and pasta, though it has it's own flavour and when cooked, it's texture is somewhat similar to couscous.
The recipe is taken from Olive magazine (January 2016).
Ingredients:
400 g cauli rice
100 g chorizo, diced (or 150 g chorizo style sausages, skins removed)
2 cloves garlic, crushed
2 roasted red peppers from a jar, diced
200 g raw peeled prawns
1 tsp paprika
1 cup flat leaf parsley, chopped
Method:
Heat 1 tbsp oil in a frying pan and fry the diced chorizo or crushed chorizo sausages until golden and crisp.
Add the garlic and roasted red peppers and cook for another minute.
Tip in cauliflower rice and the prawns, sprinkle with paprika.
Season and fry until the prawns are pink, and the cauliflower grains are tender.
Stir in chopped parsley, serve and enjoy!
